The Komodo co-op is one of 13 or so neighboring co-ops, all certified organic. Coffee traceability in Indonesia is far less advanced than farms in Central America, and varietal mapping systems and single varietal lots are quite rare. The Komodo is likely to contain many of the common varietals found in the islands such as Djember, Bergendal, Ateng, and Timtim.
The Flores Komodo is a semi-washed processed coffee. The protective parchment layer is removed before the seed inside has dried to its stable moisture content. This exposes the tender seeds to the elements and to the biology around it, giving the Flores its classic, wild earthiness.
Coriander, spiced dark chocolate, sweet tobacco, and a tiny bit orange zest hit first, while toasted and candied almonds take the finish. This coffee tells a great story on the palate with its unique and dynamic character.
