This decaf is produced from a blend of Guatemalan coffees that are chosen individually based on similarities in flavor and character. After being fully processed and dried, the raw seeds are steeped in a tank containing a solution of coffee solubles. The caffeine is extracted from the seeds, while all of the raw coffee's flavorful compounds are retained. This is called water-processed decaffeination, as it uses nothing but fresh water to remove caffeine. Thanks to this method, this coffee is sweet, complex, and exciting, retaining most of its origin characteristics.
