This heirloom Ethiopian coffee is fully washed, meaning the fruit is stripped and washed away before the seeds are dried. This is uncommon for an Ethiopian coffee, as they are traditionally processed via "dry-processing," where the whole cherry is dried intact before the seeds are removed.
This washing adds a light, freshness to an already fruity and lively coffee. Sweet grapefruit notes and floral nuances intermingle to create a refreshing, spring-time cup of coffee.
